Banana Nut Bread
Ingredients
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 cups flour
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup milk
- 1 cup mashed bananas (about 2 large)
- 1/2 cup pecans
Directions
Preheat oven to 350° F.
Cream the shortening and sugar together. Add the eggs, one at a time, beating after each addition. Add the sifted dry ingredients, alternating with milk and bananas. Stir in the nuts. Bake in a 9" x 5" x 3" foil-lined loaf pan for 65 minutes or until done. Test with a toothpick in the middle of the loaf.
